I know I can add various effect backgrounds, but I wonder if I can change the default empty background color from Black to … white?
Or do I actually have to make a replacement image, add it, etc. which seems like a lot of complexity for a simple thing.

For a background, you can select Images and Videos as your base background layer. Then add a new layer, perhaps your camera with a virtual background set to transparent or one in the list. I have a split screen present which has a blue radial background that I created in PowerPoint as my default background for the first layer. The second left layer has my title screen; and the right layer has my main camera with a virtual background of the blue radial image.
Also, instead of selecting Images and Videos, you could select Color Source for just a plain background layer
